Carrot Cake Waffles with a Cream Cheese Cloud


2 1/4 c all-purpose flour
1T Baking Powder
3 T Sugar
1t salt
1t Cinnamon
1/4 t ground cloves
1/2 t ground ginger
1/2 t ground nutmeg
2 large eggs separated
2 c milk
1/2 c vegetable oil
1 t vanilla
4 cups finely grated carrots
Cream cheese cloud (recipe below)
Your favorite caramel sauce

Preheat the waffle iron. Spray with nonstick spray. Mix dry ingredients together. Set aside. Beat egg whites to stiff peaks. Set aside. Mix egg yolks, oil, milk, and vanilla. Add to dry ingredients. Mix well. Add carrots and mix well. Fold in egg whites. Pour the waffle batter into a preheated waffle iron and cook until golden brown; my iron takes about 3/4 of a cup. Top with a cream cheese cloud and caramel sauce.

Cream Cheese Cloud

1c heavy whipping cream
1 pkg cream cheese soft
1/2 cup frosting sugar
1/2 t vanilla

Using a stand mixer, beat the soft cream cheese, sugar, and vanilla until blended; set aside. Whip the heavy whipping cream into stiff peaks and fold in the cream cheese mixture. Serve on waffles with caramel sauce.
